No, it's not a Pizza.


It's not really Pizza season, but this isn't a Pizza anyway.

I was leafing through Rick Stein's book 'Secret France', when I came across his recipe for Tarte Flambée, and it really appealed.

In Alsace, where this tart comes from, it's known as Flammekueche (pronounce that as you will), and I suppose it is a pizza look-alike.


This (above) is the one I made last night. The main difference is that there is no tomato and no mozzarella on the French version. The base of the Tarte Flambée is firstly spread with thick cream, then thinly sliced onion, then grated Emmental, and topped with tiny cubes of fried smoked bacon. About 20 mins in the oven, et voila! Nothing could be more simple.

Lady M complained that there was no accompanying salad, and I agreed with her; it needed something crisp and refreshing alongside. Otherwise it was very good; a bit rich maybe, but pleasant for a change. Below is Stein's superior version which prompted my desire. It's worth a go... you may like it.

  1. We've been watching Rick Stein on a rerun of his Venice to Istanbul series. He's good. I always get a chuckle.
    I have a book of his on the med. Now I'll have to look for Secret France.

    1. The Venice/Istanbul series was one of the best. I think I have all his books, but Lady M may surprise me at Christmas.

  2. I ate Flammküchle in Alsace too - (with salad :-) - and like it once in a while - a bit rich, but nice.

    1. Yes, I certainly found it a bit rich, but we did eat the whole thing between the two of us. We should have eaten just half, and saved the rest for today.

  3. There's a season for pizza? Are they only hunted at certain times of the year, like Haggis?

    1. I think of Pizza as a Summer dish, and I only ever eat Haggis in the Winter; like Grouse or Pheasant.

  4. OMG Cro ..... we have this once a week ..... I confess that I don't make it. I get it from Ocado .... its a French brand called Picard .... Picard Flammekueche Tarte Flambee.We always have it with a green salad and it is delicious. Maybe I should make my own ? As much as I don't mind a pizza now and again, I think this is far superior. XXXX

    1. Well, well, well. Lucky you that such things are on sale in the UK. You should make your own, it's so easy. Look for Stein's recipe online. I should add that I didn't make my own base... I'm hopeless with pastry etc.

  5. Hubby would love that, he does not eat cheese, he has mastered a cheese-less pizza, but it's always nice to find a new treat to try.

  10. It’s great when you find a good recipe that you can add to your regular meal plan. That looks and sounds very good.

    Pizza here in the US is all seasons especially when you don’t want to cook and pizza shops are on every corner.

    1. I don't think I've ever eaten a bought pizza. However, I do always buy my pizza dough ready made.

  11. Thank you for the scrumptious recipe!
    It also makes a nice base for customizing. I'm going to toss on curly parsley and feta cheese (sometimes), and for salad, watercress, blueberries, no dressing but maybe a small sprinkle of apple cider vinegar.

  12. Pizza season Down Here is winter as far as I'm concerned. Making a pizza for one person is best done by the nearest and bestest pizza cafe.

  13. This looks far better than any pizza I have had. Buying the crust makes it even better for someone like me that does not cook/bake that well. The salad, as Lady M. suggests will be key.
