Champagne Anyone?

It's been just over two weeks since I made the Elderflower Champagne, and it had to be opened to check that the alchemy has worked correctly..... I can confirm that it has!

  1. Over the weekend, one of my more avid readers declared somewhat irrationally that my writings were ALL LIES.

    So, I would like to reassure my more 'normal' readers that the above photo was not falsified, that no shop-bought bottles of fizzy pop were substituted, and that no children or animals were harmed in any way in the making of this delicious soft drink.

    I quite expect my detractor also believes that the world really did end on saturday.

    Have just found your blogg and seem to have stumbled into a good old fashioned cat fight: what fun.

    Your reader has presumably never come across Elderflower Champagne: how sad is that. I think it's wonderful stuff, though I have never made it myself.

    On the other hand, I have made ginger beer, sometimes with quite spectacular results. I remember once, when I probably overdid the yeast, corks started popping. So we felt obliged to drink up the rest of the cache before it ended-up all over the cellar. It took several years for my appetite for ginger beer to return.

  9. Looks good enough to drink. May I beg the recipe? I live in a city centre with a huge elder bush covered in blossom, climbing all over our back wall. Admittedly from the hotel car park behind so presumably full of lethal exhaust fumes - but what the hell - you only live once.

  10. Elegance: 6 heads of Elderflower, 600 gms sugar, 6 litres water, juice of 1 lemon, zest of 1 lemon, and 2 tablespoons of clear vinegar. Combine in clean bucket, leave for 24 hrs, then filter into flip-top bottles (see above). Leave for 2 weeks before drinking. It's as simple as that!
