Terroirs de gueuletons: Woodcock.


In France there is a 'Brotherhood' for just about everything; they dress in robes and chains, and hold extravagant ceremonies. In this case Arthur and Vincent meet-up with the Confrérie de la Bécasse à la ficelle. This roughly translates as 'A bunch of bon vivants who like to get together, drink a lot, and cook Woodcock by dangling them from lengths of string in front of an open fire'.

One would never find a simple 'Woodcock Club'; it has to involve something complicated and different to make it special. France is like that!

So, any excuse for a grande bouffe and piss-up, whilst also tucking-in to Wild Boar testicles; amongst other things.

I must say, those Bécasse do look very good. As the testicle chef says at 2.25mins 'mangez bien, buvez bien'; it's good for the heart!

There does seem to be an awful lot of wine drinking. I'd be under the table before the Bécasse arrived!

My mother used to roast snipe on toast and it was yummy, toast to catch all the goody fat dripping off the bird and bacon. But a rare treat. Excellente. Snipe or woodcock, prepared same. I enjoyed the film and was envious that they had so many.

I've never seen either Snipe or Woodcock around here. I think they were down closer to the Spanish border. You don't need much; a small game bird, a fire, and some toast. Wonderful.

They all seem to be having a great time. However, I wouldn't want to eat a bore's testicles - even if the bore in question was Britain's current Health Secretary.

I don't think Arthur and Vincent were too impressed either. I'm always ready to try anything new, but they did look quite evil.

I love listening to the French language and I do like French wine, but eating boar testicles is rather boorish.

Those good old boys know how to live. And not a female in sight to nag at them.
We eat lambs testicles, fried. They are a much lighter colour. Very nice too.

Certain bits of animals are probably best minced, and hidden in Paté, or something similar.

I don't think French women go in for clubs. No Women's Institute, or Townswomen's Guild, etc.
