I promised you Girolles, and here they are.
Above is what they look like when I return from the woods. Below is what they look like when given a good wash. Girolles are one of very few mushrooms that have to be washed under running water!
Tonight we shall eat a Girolle omelet. Price €250 Chez Maxim's in Paris; but free chez Cro.
N.B. These mushrooms are actually apricot/orange in colour....I've no idea what happened with my camera!

Once trimmed and washed they look very good. Not sure that I have ever tried them unless it was in Villefranche.
Don't have too many or you wont have mush-room for desert!

Why under running water? Are other mushrooms washed differently? Enjoy your omelette.
Jealous....we have found ONE morel to date!
They are quite small mushrooms that grow after a heavy downpour. They have 'gills' underneath the cap that can become quite dirty, and the only way to remove it is with running water. Other mushrooms, like cepes, are cleaned with a damp sponge or brush, or they would absorb water.
I would probably pick the wrong ones and kill everyone..
Please make my omelet with a bit of cheese as well .Just call when its ready.
