The Great British/French Boiled Egg




I often find myself in a quandary about breakfast. Most things I like can be found in the fridge, but it's the choosing that I find difficult.

I hadn't had a boiled egg since early Spring, so that was yesterday's choice. The next problem is getting the timing 'just right'; no easy task. It is said that Prince Charles has several boiled for him each morning, all a few seconds apart, so that he can be guaranteed that at least one will be perfect; sensible chap.

The ones below were about 30 seconds over-boiled. I must try harder.

A perennial problem, I love duck eggs when I can get them and seem to have more luck getting them just right.

What happens to the boiled eggs Charles rejects? Do they get fed to the lesser royals? Or donated to the paupers at the gate?

I laughed when the chicken popped up out of the egg.
I once learnt the perfect way to boil and egg and it worked every time. What a shame I have forgotten the method.

Gosh,it's been years since I had a Duck Egg. My oldest used to buy them from his local market, but we hardly ever see them on sale here.

I asked myself that question, and presumed they continue to boil the rejects, and eat them later in salads.

I always poach my eggs, just drop them in boiling water, light and fluffy every time and always a runny yolk, perfect with smoked salmon.

I have an egg poacher, but it remains unused; I don't know why because I love poached eggs. Your method is probably the best.

I love your eggcup! And possibly covet. I have a small collection of them - I'm not going to say I'm a proper collector of these things but I do have rather too many to choose between.

Ever since I was given this one, I've been hunting around all the local Boot Sales for more; without success. I see lots of ugly modern ones, but nothing like mine!

Andrew.s reply made me smile because I am the same. I read the best way - I think it is to put the egg in cold water in the pan and then leave it for seven minutes on the heat - the first time it was perfect but have never achieved it since. I like the yolk almost set.

The problem with using other people's directions, is that we all like our eggs different. For me the white must be solid, and the yolk still runny. Not easy to achieve.

Same here. no regular supplier, not in any stores, appear occasionally on market produce stalls.

How is it that you don't have your own chooks and eggs farmer Cro? You have the space and the fresh leftovers from your garden meals. Or have you been there, done that and found a few problems?
Everyone asks us why we don't have a few chooks (or a pig) in our garden. I can't stand the darn things. The yard would smell in the summer and we'd probably have flies and other beasties. You?

I was given three duck eggs this week , I am going to enjoy them boiled .

Many years ago we had a whole run-full (15) Hens killed by a Fox, and more recently we had just a few that were killed by our neighbours Dogs. We've rather lost faith.

I do love an egg in all its guises. Like you, a boiled egg has to have a set white ( not snotty in any way ! ) and a runny yolk ...... very difficult to get right. XXXX

I have no trouble with fried, poached, or scrambled; but getting a boiled egg just right needs a A level.

I like a good farm egg and soldiers to dip in. I don't restrict it to breakfast time and often have a boiled egg in the middle of the day.

Trust me...I have an A level in boiled eggs

2 and a half minutes boiling
straight out and into the egg cup
top cut off immediately
soldiers must be buttered and ready
if too runny place top back on for few seconds

I always have fresh farm eggs on hand. They are a good source for protein and make a quick easy meal any time of the day.

That sounds a lot less that I usually do. Someone (Delia maybe) suggested singing two verses of 'Onward Christian Soldiers'; that sounds like similar timing to yours.

It all becomes so complicated. I suggested an A level qualification above, but I'm now thinking a degree might be better.

I can never recall having a boiled egg other than at breakfast; plenty of fried eggs at other times of the day, but not boiled.

My fridge is never without eggs. At this time of year we often eat hard-boiled eggs with our lunchtime salads, and Lady M is an avid cake maker.

Boiled eggs are so tricky to get right! It depends on the size and freshness of the egg. Remembering to set the timer is at the right moment also helps! If we get one just right we're so thrilled!
Love the egg cup. Might start a collection......
