A perennial problem, I love duck eggs when I can get them and seem to have more luck getting them just right.
ReplyDeleteGosh,it's been years since I had a Duck Egg. My oldest used to buy them from his local market, but we hardly ever see them on sale here.
DeleteSame here. no regular supplier, not in any stores, appear occasionally on market produce stalls.

DeleteWhat happens to the boiled eggs Charles rejects? Do they get fed to the lesser royals? Or donated to the paupers at the gate?

DeleteI always poach my eggs, just drop them in boiling water, light and fluffy every time and always a runny yolk, perfect with smoked salmon.
ReplyDeleteI have an egg poacher, but it remains unused; I don't know why because I love poached eggs. Your method is probably the best.
DeleteI love your eggcup! And possibly covet. I have a small collection of them - I'm not going to say I'm a proper collector of these things but I do have rather too many to choose between.
ReplyDeleteEver since I was given this one, I've been hunting around all the local Boot Sales for more; without success. I see lots of ugly modern ones, but nothing like mine!
DeleteAndrew.s reply made me smile because I am the same. I read the best way - I think it is to put the egg in cold water in the pan and then leave it for seven minutes on the heat - the first time it was perfect but have never achieved it since. I like the yolk almost set.
ReplyDeleteThe problem with using other people's directions, is that we all like our eggs different. For me the white must be solid, and the yolk still runny. Not easy to achieve.
DeleteHow is it that you don't have your own chooks and eggs farmer Cro? You have the space and the fresh leftovers from your garden meals. Or have you been there, done that and found a few problems?
ReplyDeleteEveryone asks us why we don't have a few chooks (or a pig) in our garden. I can't stand the darn things. The yard would smell in the summer and we'd probably have flies and other beasties. You?
Many years ago we had a whole run-full (15) Hens killed by a Fox, and more recently we had just a few that were killed by our neighbours Dogs. We've rather lost faith.

ReplyDeleteI have no trouble with fried, poached, or scrambled; but getting a boiled egg just right needs a A level.

That sounds a lot less that I usually do. Someone (Delia maybe) suggested singing two verses of 'Onward Christian Soldiers'; that sounds like similar timing to yours.

ReplyDeleteIt all becomes so complicated. I suggested an A level qualification above, but I'm now thinking a degree might be better.
DeleteI like a good farm egg and soldiers to dip in. I don't restrict it to breakfast time and often have a boiled egg in the middle of the day.
ReplyDeleteI can never recall having a boiled egg other than at breakfast; plenty of fried eggs at other times of the day, but not boiled.
DeleteI always have fresh farm eggs on hand. They are a good source for protein and make a quick easy meal any time of the day.
ReplyDeleteMy fridge is never without eggs. At this time of year we often eat hard-boiled eggs with our lunchtime salads, and Lady M is an avid cake maker.
DeleteBoiled eggs are so tricky to get right! It depends on the size and freshness of the egg. Remembering to set the timer is at the right moment also helps! If we get one just right we're so thrilled!
