I've made the Jam, I've frozen probably more than we'll eat, now is the time to make our Vinegar.
There is nothing better on a simple summer salad than freshly made Raspberry (or Tayberry) Vinegar, and good quality Olive Oil. It is sweet, fruity, and refreshing.
To about 500 gms of Raspberries I add about a pint of colourless vinegar, and half a cup of sugar; all quantities are to taste. Two days later it is strained through muslin and boiled for a short while to kill off any yeasts, and remove impurities. It is then bottled and is ready for use.
Your summer salads will never be the same again.

Oh my goodness this sounds so lovely It sounds like it would also look so pretty in a jar.
I use the Traders Joe's Orange Vinegar for my summer salads, it tastes very nice, no Tayberry here.
cheers, parsnip
Sue gave me some local (Aus) raspberry vinegar in my Christmas present. As you say, delicious on a salad with a Good EVO. It is also delicious on oysters.
I should think Orange Vinegar would be quite similar, with a sweet fruity taste.
I like fruit in my salads (Figs, Melon, Oranges, etc), and the Raspberry Vinegar brings it all together. What's an EVO?
Extra Virgin Olive Oil
I also use a lot of fruit in salads - whatever is available. Lots of avocado, and as you say, oranges and melon. Not weather for salads now. Turned cold.
Silly me; I should have known!
So simple to prepare and safe it in the jar. It would look colorful:)
Sounds wonderful. No raspberries, tayberries or similar here. The closest we get is balsamic with some fruit taste, ready made of course.
Hope it's salad weather over there
This is new to me; never heard of raspberry vinigar. Interesting.
Greetings Maria x to
It takes just a few minutes to make, and worth every second.
This is really quite sweet (depending of course on how much sugar one adds). It is surprisingly good on simple salads.
I don't think many people here would know much about it either.
About 30 C. lovely weather which should last another week or so.
lovely..good to use in the winter as a hot drink as well (diluted of course)
I've made elderberry and/or blackberry vinegar before..the elderberry, hot, if you get a cold, is very soothing..especially with a little ginger root grated in..
I was reading about raspberry vinegar the other day and the health benefits to be gained from it. I can't remember what they were though.
I think Raspberry vinegar is good for sore throats, coughs, etc. It's certainly good on salads.
I laugh when I read of the health benefits of different things. Usually they all have exactly the same qualities. Helps prevent cancer, good for your heart, helps reduce the effects of diabetes, etc, etc. Probably mostly nonsense.
I am going to make this with the first of my raspberries. Sounds lovely.
I think I will give this a go. I like raspberry vinegar but hadn't thought to make it.
I just had some of mine on a salad for lunch; lovely.
It's so simple. Much better than buying it.
It sounds just wonderful and just the thing for a fresh summer salad.
It really is a revelation. Worth trying.
Sounds more exciting than boring olive oil.
You can add a splash of olive oil to the finished salad. Good for the heart.
And try to make REAL vinegar and not a juice which you call vinegar.
