A Pleasant Surprise.



Yesterday, before heading off to collect Lady Magnon's London shopping from the airport (plus Lady Magnon, of course), I made myself a simple salad for lunch.

Imagine my delight when I found that my hard-boiled-egg was a double yolker; the first of 2018.

Last year my egg man supplied double yolkers for well over a month; every single one was a double.

I do hope he repeats the favour; there's something really nice about double yolkers!

I've only seen one in my life when I was young. I don't suppose you can tell until the shell is broken.

It is always a pleasant surprise isn't it. I often get them in the eggs I buy at the market and, of course, when we had our own hens up north.

The last time I saw double yolk eggs was when we had hens and, that was when I was a child.
Your breakfast looks scrumptious.

Have you ever had a Mother and Child Reunion? This is a chicken and egg salad.

I still boil my eggs to death as advised by Edwina Currie. How they crucified that woman for telling the truth about salmonella I always think as I tuck into my yolk.

You can imagine our surprise last year when one after another they were ALL double yolkers. I asked the egg man if they were a special variety of hens; he said no.

I get a double yolker now and again ...... I wonder why it delights us so much ? I hope you will show us Lady M’s food purchases ? I am guessing she went to Bishops Stortford ? XXXX

She brought back mostly spices, and vegetable seeds, with one lot of really good mature Cheddar cheese. I might post a picture.

Having been brought up as a country boy, it was something we all took for granted. I couldn't understand all the fuss.

That's a posh salad for a "single" man to make! Is that remoulade as well? You know how to look after yourself! When I'm having a "single girl" night my fallback is invariably spaghetti aglio e olio. Ferocious knife, by the way.

I can't remember when I last had a double-yolker. We have a lot of free ranges eggs available on the Island though.

It was a very simple salad; I did make myself Spag aglio e olio about three nights ago. My 'eating' knife is an Opinel No 9 stainless steel. I wouldn't be without it!

I can't imagine what makes them lay so many doubles. It's never happened with my own hens; one or two maybe, but not continuously.

Its often the hens in their first laying season, before they "get it right"...these wouldn't hatch as twin chicks

They were quite small eggs too. I remember when ours started laying, they would produce all sorts of bizarre eggs.

My mother used to sell eggs to Sainsburys in the 1950s. They would not take double yolkers. Any egg that looked bigger than the rest mum would take out for home use. It was a bit hit and miss. The farmer opposite had lots of double yolkers from his flock and Sainsburys stopped buying from them. All the eggs were sorted by hand by mum and it was a school holiday job for the rest of us.

When I kept hens on the farm I often had double yolkers but I didn't boil them, so I was delighted to see how lovely they looked.

My daughter rang me up recently to say she'd just had 2 double yolkers - she was so excited!

I used to have a backyard collection of hens. Double yolks tend to occur with young birds, new layers, but I don't know why. Perhaps your egg supplier has birds that are just mature enough to start laying. -Jenn

I would have thought Sainsbury clients would have been thrilled (as am I) to find double yolkers amongst their weekly dozen.

My nan used to give us 50p if we had a boiled egg double yolker! I think it was to make us sit and eat breakfast! lol

Me too. When I was small it was a real treat to have a double; now it seems just 'ordinary', at least it does here.

We buy the jumbo eggs here - from the grocery (not as good as fresh we know, but fresh from the chicken not always available). But these tend to have quite a lot of double yolks. I'm always happy to get one... not sure why, but guess it seems like a bonus.
