Now that I've discovered where the ready-made Puff Pastry is hiding in my Supermarket, my world has become a whole new Oyster.
My title of 'Veggie Pie' isn't quite correct as I did add some Bacon bits for a hint of flavour, but as we all know, most Veggies eat Bacon when they're alone. Otherwise it was just Potato, Onion, Leek, with herbs spices etc. I meant to add lots of grated Cheddar, but I forgot.
I must say, it was very good; with half of it left over for a light Sunday Lunch with salad.
Suddenly gaining confidence with 'pastry' has opened-up all sorts of opportunities. The filling in the above was really delicious, and the pastry top was just as I'd hoped. I'm now trying to think of all the other delightful things I can make.
I should add that we seem to be eating far more Veggie dishes these days. I know this wasn't 100% Veggie, but it was 'almost', and that's fine by me!

After reading your post I so want to make a pie like this, using the store made pastry. Great idea from you! I will try it.

I'm not normally a Pie Maker, but this was so easy. I can see it appearing regularly on the Cro household menu.
We eat meat just 3 times a week , 2 days fish and 2 days meat free.
I baptised bacon vegan a few years ago when I did a year without 'meat'. Also cheese and meatballs.

Delicious. I love the ready made puff pastry. You can just cut a square of it , add things like pesto and tomatoes or bacon and cheese , tomato purée, mozerella, brie, caramelised onion etc etc and cook for 25 mins and, voilà, delicious lunch. XXXX
I do stick to the Friday fish tradition, and we eat veggie at least once a week; often more. I would be quite happy to eat less meat; especially at the price it is.
Bacon is 'honorary' veggie. You really can't go without it. The idea of NEVER eating Lamb or Chicken again is nightmarish.
I had a piece of pastry left over which I filled with slices of mature cheddar and some chili flakes. It was superb! The possible recipes are endless.
Nephew is just making the same discoveries here - pie making is good for everyone.
And fun too. The results are always a surprise.
I also got inspiration from you for the next meals.
You neglected to mention that you included a duck in your recipe - unless it is of course a "Cro" or a blackbird. It's hard to tell.

That sounds delicious - I may give it a try, I've several packs of pastry (including Filo) in the freezer.
You will be able to try one of my favourites - spinach and goats cheese, wrapped up in Puff pastry. It looks just like your "not pasty" from last week!
That's a nice combination; two of my favourites. I shall buy some Goat's Cheese tomorrow.
Not veggie but I make a mean chicken, bacon, mushroom, leek and carrot pie. The secret is some white vermouth in the sauce
Your pie looks delicious. Mostly veggies in a pie with cheese sounds easy and quick. Do you pre-cook all the veggies in oil? The ready-made puff-pastry is always winning.
That all sounds very good, apart from the Carrots. I only like Carrots in a Lamb or Beef stew, or grated as a salad with lemon. Otherwise it sounds delicious.
No, I put everything in raw, but smally diced. They all cooked perfectly.

I’m like that with peas. Like them in their own but not in stews.
Sausage plait is a favourite in our household. Even convinced the German that there are great sausages made by other nationalities.
I once bought a hot sausage from a street seller in Frankfort. It was probably the most delicious one I've ever eaten.
