Simple Veggie Supper.



Having a few Veggies around is good for practicing my skills. We still do try to eat Veggie at least once a week (often more), but usually it's pasta based.

I tend to stick to things I know, and last night I stuffed some peppers, aubergines, and endive (chicory), with brandade (mashed potato, salt-cod, garlic, olive oil). Above was the pre-cooking stage.


Of the three different vegetables, the peppers were unquestionably the best. They are bottled Spanish piquillos and lend themselves to the process extremely well. The aubergine and the endive were also very good, but lacked the essential tartness of the preserved peppers.

If you have Veggies coming for supper; I recommend. Simple and delicious. With our wood-fired cooker (George) on the go, it made us feel extremely virtuous.

    1. Probably from the deep south; under polytunnels I expect. Unlike some vegs, Aubergines always seem to taste exactly the same whether from Haddock's or elsewhere.

  2. I didn't know chicory and endive were the same thing. We at times have cold milk drink with chicory syrup mixed in the milk.

    1. I wonder if that's the same Chicory? There is a type of Dandelion that has roots which produce a coffee substitute; also called Chicory.

  3. Err....if you have veggies coming, leave out the fish!! Please!! Otherwise that looks a cracking good supper 🙂
    So many times we have been to places or meetings with veggie food advertised....must be good as it disappears first!!

    1. Our Veggies all eat fish; some are even reverting to eating 'white meat'. I suspect it's something to do with all the Vegan nonsense around; they don't want to be associated with it.

  4. I like the sound of that stuffing with potato and cod. You've mentioned it before. Just now you've reminded me that we haven't had salt cod for a while. Must buy a piece.
    Had wonderful steamed broccoli at a taverna last night. Not often we going broccoli on the menu and it's usually overcooked and cold. This was hot! Delicious

    1. I love Broccoli. I do grow it, but it takes a lot of space in return for very little food; a bit like my Caulis..

  6. If it wasn't for my love of smoked streaky bacon (in a sandwich for my tea) I would go veggie as I love the food. This looks delicious. I must say I have never thought of mixing things with mashed potato to make a filling. Also not sure where or whether I could buy salt cod. We have the best fish stall for miles around on our Friday market with all the fish fresh from Whitby - there isnt much they don;t have so must ask them.

    1. I think one could add plain cooked cod. It's the combination of very creamy potato, fish, garlic and olive oil, which matters. Maybe your fishmonger could do some research, and start selling it!!!

  7. We eat meat free once a week, I fell it's a simple way of cutting back on the production of meat, if everyone did it.....

    1. I should think we eat Veggie at least twice a week in the evenings, and almost every day at lunchtime. I don't really even think about it any more, it just comes naturally. However, I'd never count myself as a Veggie; I like my meat too much.

  8. Surely using brandade makes you pescatarian... not veggies?
    Alright, I know that brandade is all potato and onion and a few fish flakes.... but it still contains fish.

    Actually, brandade makes fabulous fishcakes... just add a bit of flour to stiffen it up and off cuts of smoked salmon to increase the fish and an onion [finely chopped].
    Form into patties and put on a greased baking tray [10 mins at 180 Centipede, turn them over and repeat... serve]

    1. Our local Veggies eat fish; maybe they should re-name themselves. I do exactly that with brandade. Occasionally I add 'stuffing mix', or oatmeal, or as you say flour. I had some yesterday morning for breakfast (fried), and shall have some more this morning. Delicious.

  9. Looks delicious! I've not fussed about with salt cod before so might give this a whirl. I like endive raw and often have it in salads but it's pretty $$ here so tends to be a treat only.

    1. I don't normally look at prices of things I buy, but I did notice that the endive was twice as expensive as the aubergine. I like it in salads too, but Lady M finds it too bitter; silly girl.
