Veggie Wednesday.


We always eat 'veggie' at least once or twice a week, but I had abandoned my strict adherence to 'Veggie Wednesday'. But like Fish on Fridays, it is a ritual worth keeping.


I have mentioned several times about my favourite 'Compost Fry-up'. I never tire of it. It may not look so wonderful, but I can assure you that it is!

I usually take a mix of mostly-ready-cooked Aubergine, Courgette, Potato, Pepper, Cauliflower (and usually some Haricot Beans) cut into chunks, then fry in plenty of Olive Oil and Butter, before sprinkling with a good spoonful of ground Cumin and a little Salt. I serve with a topping of Cumin Seeds.

The Cumin changes what would otherwise have been an ordinary vegetable mixture into something very special. 

Lady M agrees with me that we should have more 'meatless' days. Perhaps we'll instigate a 'Meatless Monday' as well.

This is very similar to what I make here almost every day, just without the cumin, maybe I'll try that.

For me it's the Cumin that makes all the difference. But I'm a huge fan of Cumin!

Ive made something similar in ages past after reading about your compost fry up. Now I rarely eat vege it's fried veges traditional style for him and fried burger patties for me.
Greeks do something similar but it's simmered in a pot.

When I do my version I have to go easy on the fats so just a light spray of olive oil before popping in the air fryer.

We are the same, meat 3 days fish 2 days and vegs 2 days, done it for years, it's a simple way of cutting back.

Your compost fry up is one of my favourites, thank you Cro, so easy to do and brilliant when you can't think of what else to cook that day. We like it with a fried egg on top as well.

I eaten all sorts of Veggie dishes over the years, but I always come back to this one. We love it.

I think both Olive Oil and Butter are actually quite good for you. At least, I tell myself that they are!

A fried egg on top could only improve it. I'm pleased that you enjoy it too.

With the exception of potato and beans but with the addition of onion and garlic, that's the basic recipe for my home-made veggie soup. I cook it all in a big pot, using puréed tinned tomatoes for liquid. I also add cumin (circuma). It's all liquidised then stored in containers in the fridge. I count this as part of my 5 a day and it's equally tasty hot or cold. My weakness is to eat it with garlic flavoured croutons!

I make a very similar lunchtime soup which we eat from about October to March/April. Then we change to salads (which we are eating now).

Cumin is one of my favorite herbs and it sounds very good in your veggie dish. I must try this!

I love Cumin. I can remember my very first taste of it. It was a revelation.

Spices and sauces can make such a difference in food. Entirely two different dishes , just with two different sauces.
