Friday 7 am.


Kimbo always joins me for breakfast early on Friday mornings. It is slowly becoming a 'tradition'.

Usually it's Bacon, Haggis, Sausage of some sort, fried Eggs, and Toast. but occasionally I'm prepared to go a bit wild and present him with something different.

I haven't yet offered him Porridge or Rice Crispies, or even Scrambled Eggs, I remain within my realm of skill; frying, toasting, etc.
 

I didn't know quite how he would react to a couple of soft boiled Eggs, with Toast and Coopers Oxford Marmalade, but he was reasonably forgiving. I think he would have preferred his Full English, but we both have to watch our waistlines.

I suppose it's laziness, but I usually just fry my eggs. I hadn't had a boiled egg for ages. They could have benefitted from an extra 30 seconds boiling, but we both really enjoyed them.

    When I first came to England my future mother-in-law, a lovely woman, served me eggs and soldiers in the "breakfast room". Seriously? Soldiers? Never mind. Only the English. Those narrow strips of toasted bread for dipping into the yolk did fulfill their destiny [in my stomach].

    Do perfect the art of the scrambled egg though, Cro. Like a lot of arts it's dead simple - if you know how. My mother's? I know one shouldn't speak ill of the dead. I am not - in fact, I am stricken as she died five weeks ago and I'll never hear her voice again - but hers were like saw dust. Yes, so one of my master pieces I often served the Angel for his breakfast: Smoked Salmon with the creamiest scrambled eggs you wish for. Dreamy. Hot tip of the day: Don't take your eyes off them whilst stirring. They are done in zero time. Serve immediately.

    1. It's a strange thing. I love eggs in all their forms except for SCRAMBLED. I don't know what it is about them, but my stomach says "NO".

  2. I like hardboiled egg, sliced and in a sandwich with marmite and mayo on the 2 different slices of bread. Delicious if you like marmite!

    1. I love Marmite; I was raised on it. I haven't had an 'Egg Sandwich' since I was about 5. I must remedy that!

  3. Yes. Getting the correct timing for boiled eggs can be tricky. It's a lovely habit you have developed with Kimbo. A nice regular time to catch up. Kippers?

    1. I thought I'd timed it perfectly, but no so. I shall do better next time. Not too sure about Kippers, I love them, but they need to be cooked outdoors (if you get my drift).

  4. Chuck them into boiling water and poach them, you can then see when they are as you like them.

    1. I think that's a better idea. I even have some special silicon floating 'poachers' that work very well. I hardly ever use them.

  5. If you can stir you can make porridge. My go to breakfast

  6. I like scrambled eggs as they are so quick and easy. Even better with smoked salmon on brown multi-cereal toasted bread. Add a little single cream to the mix before cooking and they are deliciously light.

  8. Although you may not like the sound of this, boil in the bag kippers from Waitrose are just as good as the real thing. No mess, no cooking smell and taste great.
