Not our own compost this year (as yet), but we still have the desire for this dish; a true family favourite.
This particular example consisted of supermarket-bought spuds, beans, aubergine, red pepper, courgette, and a few broad beans.
All cooked and fried in olive oil, salted, and with dried herbs and plenty of ground cumin thrown in at the last minute.
What a treat.
Looks similar to my meal last night where I chopped up everything left in the crisper and fried it up with a little curry powder.
ReplyDeleteMy version of your Compost Fry-Up is Use-It-Up Stir Fry. My late husband used to walk into the kitchen and look at the "mess" in the fry pan and say OMG you have been cleaning out the refrigerator again. It might often have looked like a mess but it tasted and was a gourmet treat to me. A sort of exotic comfort food. I also hate to waste food especially now that it has become so expensive.
ReplyDeleteDid you use Cumin (or something else) as a flavouring? Without it I would find it quite dull.

DeleteWe had that for tea last night, it's become my favourite thing to cook when I can't think of anything else, it's delicious. We usually have it with a couple of fried eggs on top as well.
ReplyDeleteMy wife actually 'demanded' it, it's one of her favourites. However, she did scold me for not having put enough ground cumin on it; but I think it's her taste buds that are to blame.
