This is a bit of a cheat, but Lady Magnon insisted that we ate a 'Compost Fry-up'.
We still tentatively stick to our 'Veggie Wednesdays', and Lady M just couldn't wait for Haddock's to provide all we needed for our traditional Summer Compost Fry-ups. Most of the above had been bought, or was either lingering in the fridge, or the freezer.
This really is one of our favourite summer meals. A simple mix of whatever vegs are available, fried in Olive oil, garlic, and butter, and flavoured at the final minute with lots of ground cumin.
If I remember correctly, this particular Fry-up contained Potatoes, French Beans, Red Pepper, Courgettes, and Broad Beans. Delicious.

Anything with lots of ground cumin is delicious and that does look good.
ReplyDeleteAnyone with a veg' patch, and/or with left-over vegs, should try this. It's the combination of butter, garlic, and cummin, which is wonderful.

DeleteOne of the joys of growing your own, I love meals like that. The only thing which could improve your dish would be a few slices of quince thrown into the mix! (I associate your compost heap with wheelbarrow loads of quinces.)
ReplyDeleteOur Quince tree is not big, but it produces an enormous amount of fruit. I hadn't thought of including it in my fry-up; I shall remember your advice this Autumn.

ReplyDeleteMake sure that everything that needs cooking for longer is cooked before you add it to frying pan. A nice big dollop of butter, and a spoonful of cummin to finish. Lovely.

DeleteWhere did you find the recipe? What weight of potatoes is required? How much cumin should be added? How much butter exactly? Without precise measurements I will be unable to replicate your rustic dish.
ReplyDeleteIt's very simple. A handful of potatoes, a few courgettes, several french beans, just enough red pepper, and some broad beans. The amount of Butter and Cummin depends on what you have in reserve.
DeleteOne of my favourites too Cro - I call it Fridge bottom fry up. If I am particularly hungry I beat up a couple of eggs and pour in when the veggies are getting nice and crisp and that makes it into what I call a Fritata.

ReplyDeleteI shall add it to my repertoire of "fridge bottom" dishes, which include fridge bottom quiche, f b frittata and a risotto.
It reminds me that I used to make something like this regularly to go with pasta....must resurrect that.
(I expect a few bits of bacon would go nicely in it too, as long as it's not a Wednesday!)
