Compost fry-up, 2020.

This is a bit of a cheat, but Lady Magnon insisted that we ate a 'Compost Fry-up'.

We still tentatively stick to our 'Veggie Wednesdays', and Lady M just couldn't wait for Haddock's to provide all we needed for our traditional Summer Compost Fry-ups. Most of the above had been bought, or was either lingering in the fridge, or the freezer.

This really is one of our favourite summer meals. A simple mix of whatever vegs are available, fried in Olive oil, garlic, and butter, and flavoured at the final minute with lots of ground cumin.

If I remember correctly, this particular Fry-up contained Potatoes, French Beans, Red Pepper, Courgettes, and Broad Beans. Delicious.

If you don't believe me; try it.

  1. Anything with lots of ground cumin is delicious and that does look good.

    1. Anyone with a veg' patch, and/or with left-over vegs, should try this. It's the combination of butter, garlic, and cummin, which is wonderful.

  3. Am I right in assuming that is your main meal of the day.

  4. One of the joys of growing your own, I love meals like that. The only thing which could improve your dish would be a few slices of quince thrown into the mix! (I associate your compost heap with wheelbarrow loads of quinces.)

    1. Our Quince tree is not big, but it produces an enormous amount of fruit. I hadn't thought of including it in my fry-up; I shall remember your advice this Autumn.

    1. I keep looking at my Pots. They haven't flowered yet so I'm reluctant to delve. I'm really looking forward to seeing what's there!

    2. I have to force Paul to dig them early. I like them when they are still young and small!

  6. That looks so tasty ..... we had lots of courgettes amongst other veg in the fridge so I made a roasted vegetable orzo pasta concoction. You don’t need much to whip up something delicious do you ? XXXX

    2. I use the pizza recipe that you once gave because it is quick and easy although this one is a Morrisons special because it is so good and tasty.

    6. Debi, I don't know why this random comment of yours is here but one thing you need to know if you are new to blogging, as I suspect you are, is never respond to a troll. We delete and we ignore.

    1. Make sure that everything that needs cooking for longer is cooked before you add it to frying pan. A nice big dollop of butter, and a spoonful of cummin to finish. Lovely.

  12. Where did you find the recipe? What weight of potatoes is required? How much cumin should be added? How much butter exactly? Without precise measurements I will be unable to replicate your rustic dish.

    1. It's very simple. A handful of potatoes, a few courgettes, several french beans, just enough red pepper, and some broad beans. The amount of Butter and Cummin depends on what you have in reserve.

  13. One of my favourites too Cro - I call it Fridge bottom fry up. If I am particularly hungry I beat up a couple of eggs and pour in when the veggies are getting nice and crisp and that makes it into what I call a Fritata.

    1. I've never made a fritata, but I suppose with the addition of a couple of eggs (and maybe not the cumin) it would be perfect.

  14. That sounds delicious. I like that you put butter in there as well as olive oil. You get more flavour. And the cumin is interesting. Sort of thing I make for myself. I will buy some good butter to fry them.

    2. Butter has a particularly pleasant taste. I don't know anything about Stork; isn't it margarine?

  15. This looks so good. Love the name. We don't have a garden so I just call it leftovers. Your name is better.
Like Weaver's idea of a Fritta. We eat it for breakfast on toast.

  17. It looks divine!
I shall add it to my repertoire of "fridge bottom" dishes, which include fridge bottom quiche, f b frittata and a risotto.
It reminds me that I used to make something like this regularly to go with pasta....must resurrect that.
(I expect a few bits of bacon would go nicely in it too, as long as it's not a Wednesday!)
