We nearly always eat veggie at lunchtime.
At the moment there is maize (corn) everywhere, Haddock's is dripping with wonderful tomatoes, and a plentiful supply of salad leaves and roasted red peppers finishes the picture. I usually add a few capers, some tinned fish, or an egg or two.
Voila; lunch is served. Simple, appetizing, and most importantly... delicious.
Now that is my kind of meal - ah well summer can't be toooo far away!
ReplyDeleteIf you added some hard boiled eggs you could have a salade nicoise. What, no eggs?
ReplyDeleteAny tips, Sue? Still no eggs. I'm having to cheat for the boys sakes.
ReplyDeleteWe are just going into tomato season here Cro...can't wait for bushels of the lovelies to start showing up on the side of the road. Then we will make jars and jars of sauce for the winter.
ReplyDeleteI'm generally not a lover of corn, but when it comes right out of the field you could almost eat it uncooked.
That looks yummy, I will take mine without fish and egg. What time is lunch? :O)
ReplyDeleteLooks stupendous. And not just delicious, but nutritious and healthy as well. (Sure beats a hot dog!)
ReplyDeleteI can just see you creeping down to the hen house to plant eggs for the boys to find. Cute! You could always try waving a box of Sage & Onion stuffing mix in front of the hens...
ReplyDeleteCro the food looks great,as far as the egg layers go a friend of mine on a farm swears by this, she takes the axe and places it on the gate and tells them time is almost up and walah!!! eggs..honest she tells me it works, I have not tried it lol.
