Old fashioned breakfast.


How may people do you know who sit down to a couple of boiled eggs in the morning?

Probably none!


The last time I had boiled eggs was when Kimbo came for breakfast a couple of months ago, and I decided to surprise him. I'm afraid it surprised me too, as they were a bit under cooked.

It was this last Sunday morning, and the fridge contained all sorts of nice breakfasty things. I stood looking at it all with the fridge door wide open, and I simply couldn't decide. However, I did note that there were lots of eggs.

It was just after 5 am and I was busy, so I decided on something that would cook itself. After a solitary nearly five mins boiling time, they were done. Maybe this time a tad more cooked that I would have liked, but they were still very nice.

Of course the only crucial thing about boiling eggs is the TIMING. Delia Smith's aunt would sing three verses of 'Onward Christian Soldiers' to time hers, but I'm a bit more prosaic. I follow Woodrow Wyatt's method, and time them for exactly four and a quarter minutes. However, from what moment one starts the four and a quarter minutes is anyone's guess.

I like eggs in all their forms (other than scrambled). When in doubt eat a couple of eggs; BOILED.

p.s. I do remember writing about some celeb-chef's foolproof method. I must look it up. I think he brought the water to 'a rolling boil' from cold, turned it off, then left covered for a further five minutes. I seem to remember that it worked; I must check for details.

  1. I like boiled eggs too and sometimes get the timing wrong. It depends on the size of the egg I suppose.

  2. Always poached eggs here, drop them into a pan of salted boiling water, perfect every time, soft and fluffy and no shells.

    1. I have a special 4 egg poaching pan, and also two silicone, floating, poaching 'bowls'. I really must poach more often.

  3. From cold, then three minutes from being able to hear the rattle of the eggs moving in the boiling water!

  4. Boiled eggs are my husband's favourite food. I wouldn't dare to cook them for him. He knows exactly what he's doing.

  5. Mainly poached or occasionally scrambled here. I often use the boiling water from the poached eggs to boil a couple to use for sandwiches.

  6. It's a long time since I've done anything but hard-boiled eggs. 10 minutes once the water starts boiling. I always have a few in the fridge for a snack.
    Scrambled are my favourite. With real butter and some cheese.

  7. As I am on weight loss reduction medication, this morning's breakfast consisted of a banana and two boiled eggs - nothing else. As you might imagine, the eggs were expertly boiled to perfection. Within the shells, the whites contained no jelly whatsoever and the golden yolks had just reached the longed for turning point between goo and hardness. Six minutes boiling time but of course that depends on the size of the egg, its age and the breed of hen that laid it. I always prefer Rhode Island Red eggs - even though it is an American breed from the land of The Big Orange Oompa-Loompa.

    1. I used to have my eggs specially imported from the left bank of the Imooba River in the Dooga Province of Southern Umbinga. But they stopped selling them because of bird flu.

  8. I have a gadget called an eggtimer. Egg-shaped with a flat bottom and a domed top coloured red and marked soft, medium and hard. Placed in the pan with the eggs, the red gauge changes colour as the eggs cook. Works quite well.

  9. I'm making big batches of deviled eggs for two events this week--hosting my book club tomorrow and then a work potluck on Friday. Since I'm pressed for time, I'll be buying already boiled eggs (I know, I know!) to work with. Everyone loves a deviled egg, and my recipe is a good one if I do say so myself.

    1. I had no idea you could buy ready-boiled eggs; I don't think they exist here. I love deviled eggs, it's our staple for Summer lunches.

  11. We enjoy eggs all ways but our favourite at present is eggs cooked in tomatoes. I cook 2 or 3 sliced tomatoes in olive oil and butter with salt, pepper and plenty of paprika, add the eggs, put a lid on and cook till done (peeking to check).

  12. Eggs for breakfast served in an egg cup was my uncle's favorite breakfast along with buttered toast.
    I rarely have eggs for breakfast.
    I always have a few hard-boiled eggs in the fridge. They make a good quick egg salad sandwich.
